    Ingredients:

    1 c. chopped nuts (I used about 3/4 c. almonds and 1/4 c. walnuts but use what you have. Just chop really fine -- I use the food processor or a coffee grinder)
    1 onion, finely chopped
    garlic (2 or 3 cloves)
    3 ribs celery, finely chopped
    2 eggs, beaten
    3/4 c. wheat germ (I usually start with 1/2 c. and add a little more if the loaf is too moist)
    3 T. nutritional (brewer's) yeast
    2 c. cooked brown rice
    1 T. tamari or soy sauce
    rosemary, sage, thyme

    I saute the onions and celery and garlic first but you don't have to -- then just mix everything together. Put in an oiled loaf pan, bake at 350F for 40 minutes or so, let sit for 10 minutes, slice and serve! I love it with mushroom gravy but other sauces would be good. It has a very meaty texture and taste (the nutritional yeast helps with that) and is a great substitute for turkey on Thanksgiving. Leftovers are good sliced and eaten warmed, cold, on sandwiches... you get the idea. I love, love, love this nut loaf after trying many others.

    BEST NUT LOAF

    3 c. sifted all-purpose flour
    1 c. sugar
    4 tsp. baking powder
    1 1/2 tsp. salt
    1 beaten egg
    1 1/2 c. milk
    2 tbsp. salad oil
    3/4 c. chopped walnuts

    Sift together dry ingredients. Combine egg, milk and salad oil. Add to dry ingredients, beating well. Stir in nuts. Turn into greased 9 x 5 x 3 inch loaf pan. Bake in moderate oven (350 degrees) about 1 to 1 1/4 hours or until done. Remove from pan, cool on rack.

    Dried Fruit and Nut Loaf

    3/4 cup (105 grams) all purpose flour

    1/4 teaspoon baking soda

    1/4 teaspoon baking powder

    1/2 teaspoon salt

    3/4 cup (160 grams) firmly packed light brown sugar

    3 cups (300 grams) coarsely chopped walnuts (can also use pecans, hazelnuts, or almonds)

    1/2 cup (65 grams) dried cherries and/or cranberries

    2 cups dates and figs, pits removed and cut into quarters

    1/2 cup (85 grams) dried apricots, cut into quarters

    3 large eggs

    1 teaspoon pure vanilla extract


    Preheat oven to 300 degrees F (150 degrees C) and place the rack in the center of the oven. Butter, or spray with a vegetable oil spray, a 9 x 5 inch (23 x 12 cm) (8 cup) loaf pan, and line the bottom of the pan with parchment paper.

    In a large bowl, whisk together the flour, baking soda, baking powder and salt. Stir in the brown sugar, walnuts, and dried fruits. Use your fingers to make sure that all the fruits and nuts have been coated with the flour mixture.

    In a separate bowl, beat (with a wire whisk or an electric hand mixer) the eggs and vanilla until light colored and thick (this will take several minutes). Add the egg mixture to the fruit and nut mixture and mix until all the fruit and nut pieces are coated with the batter. Spread into the prepared pan, pressing to even it out.

    Bake for about 60 to 75 minutes, or until the batter is golden brown and has pulled away from the sides of the pan. (If you find the loaf over browning, cover with aluminum foil.) Remove from oven and place on a wire rack to cool. When cool, lift the loaf from the pan. To store, cover with plastic wrap or aluminum foil. This loaf is best after being stored for a couple of days. Will keep for about 2 weeks at room temperature or for a couple of months in the refrigerator. Cut into small slices with a sharp knife.

    Makes one - 9 x 5 inch (20 x 13 cm) loaf.

    Nut Load is the vegiterian version of meat loaf. I had it at a holiday party last week and after I was basically strong armed, I tasted it and it was AMAZING.

    No. That's a Dodge. I have a Ford.

    Sorry I can't be any help then. Too bad you don't have a Dodge. Maybe then you wouldn't need to get it fixed.:bigsmile:

    Now that I know what I'm looking for. Try this one.

    Vegetarian Nut Loaf
    Ingredients:
    1 large bunch greens (chard, spinach or other), chopped
    1 tablespoon canola oil
    1 medium onion, chopped
    2 tablespoons fresh chopped parsley
    1 clove garlic, mashed
    1 teaspoon dried oregano
    1 tablespoon reduced-sodium soy sauce
    1 cup rolled oats, ground to powder in blender
    1 cup nuts (almonds, walnuts, pecans or a combination), ground
    1 cup dried whole-wheat bread crumbs
    1/2 cup wheat germ
    1/2 cup ketchup
    1 egg white


    Directions:
    Preheat oven to 350 degrees. Steam chopped greens for 5 minutes. Heat oil in a skillet over medium heat and saute onion, parsley, garlic and oregano until onion is translucent. Combine remaining ingredients with greens and onion mixture.
    Shape mixture into loaf. Place in baking pan and bake for 30 minutes. Remove from oven and carefully cut into slices.

    Makes 6 servings.

    Each serving contains approximately: 365 calories, 17 grams fat, no cholesterol, 519 milligrams sodium, 45 grams carbohydrates, 17 grams protein and 9 grams fiber.
