Meal Prep Ideas

I plan to start meal prepping on Sunday's for a few days for lunches and dinners. I was thinking about doing a soup and grilling some chicken. What are some other items you like to meal prep? Do you grill big portions and make different meals out of it? Just trying not to get bored with it cause I really don't care for leftovers after a day or so.

    I just made my lunch for the rest of the week using a recipe from runner's world for a salad. I often will make crock pot recipes and that will take care of at least two dinners and a lunch.

    I'll do a soup (google weight watchers zero points tortilla soup) and then throw chicken breast in the crock pot. I eat on the chicken all week for lunch (sometimes as it is, sometimes shredded with grilled peppers/onion, shredded over a salad, added into the tortilla soup to make it more filling, etc.) .... because I'd get sick of the soup everyday, I save a couple containers for the week, and then freeze the rest in soup size containers. That helps down the road for easy prep.

    I'm eager to read what others add because I need to do a better job of this as well!

    I'm not a leftovers person. Taking a lunch-sized portion of last night's dinner to work with me is great, but I'd be so bored if I tried to eat the same soup 3 nights in a row.

    So I meal plan and shop on the weekends. I know exactly what I'm going to make each night, and I will aim to make just enough to have one serving of leftovers, since the boyfriend isn't a leftovers fan at all (although sometimes one of us grabs an extra serving at dinner, and I'm stuck buying lunch).

    I get bored of the same foods easily, so what I usually do is buy myself a new cookbook and cook my way through it. That takes me months, and then I find a new cookbook and new set of recipes to try.

    I don't mind eating the same food for several days, so my meal prep is pretty straight forward. I like to make soups/stews, wild rice chicken salad, quinoa w/ veggies, hard boiled eggs, etc. One dish dinners are good two, like healthier versions of casseroles. I make one w/ chicken and veggies - cover w/ foil and bake until the chicken and veggies are done, super easy. You can make it sweet w/ sweet potatoes and a little real maple syrup, or go savory w/ rosemary and balsamic vinegar.

    I like to make a big pot of taco soup - I just throw in ground venison or turkey, several kinds of beans, corn, can of diced tomatoes, tomato sauce, taco seasoning, and any veggies that I need to use up.

    I also like to pre-bake chicken, sweet potatoes, squash, zucchini, and pre-slice any veggies I'm going to want to use.

    Crockpots are your friend. I do a different crockpot recipe each week so I don't get bored. Soup, stews, big pot roasts, jambalaya or paella, etc. Anything you can make and just divide up into equal portions throughout the week is good.

    I also like to hard boil eggs or make some kind of egg muffins for the week.

    Where do you get your crockpot recipes from and also the egg muffins? I would be interested in trying those.
