Low Carb, High Fat Cheesecake

Crust:
-6 Tbsp extra virgin coconut oil melted
-3 drops of liquid splenda or 3 tsp of erythritol.
-3 TBS Unsweetened cocoa powder.
-1 serving of Atkins Chocolate Creme Sandwich Cookies (= 3 fake oreos) crumbled
Melt the Oil, then mix in the rest put in the bottom of a 9" springform pan, and place in the freezer for 10 minutes while preparing the rest of the cheesecake.
Cheesecake:
-1 envelope unflavored gelatin
-1/4 cup cold water
-1 8-oz package of Philadelphia cream cheese, softened
-1/2 cup of erythritol or other sugar substitute (erythritol has zero net carbs, and 0 glycemic index)
-3/4 cup of liquid heaving whipping cream
-1/4 cup lemon juice
1 cup of heavy whipping cream, whipped
Soften gelatin in water; stir over low heat until dissolved. Combine cream cheese and erythritol, mixing at medium speed on electric mixer until well blended. Gradually add gelatin, whipping cream, and lemon juice, mixing until well blended. Chill until slightly thickened; fold in whipped cream. Pour over crust; chill until firm. Enjoy!

I get it at a local health food store. You can find it at low carb online stores too. Otherwise, you could use xylitol, which is in more grocery stores - though it is toxic to dogs, or splenda, but that has carbs to take into account.0
