Skipping dinner?

I have had mixed feeling about this and I wanted to get some feedback from others. Please be nice.
This is the second time I've done this, I've been skipping dinner for the past week and I sleep better, get up easier, eat a hearty breakfast, and have been losing weight as well. On days I workout, generally 1-2 times (generally really heavy strength and cardio workouts) per week, I do not skip the aftermeal, but I guess I'm just looking for opinions for overall health. I have a very limited schedule to work out. I have 2 kids, work full time 11-12 hours away from home/day, plus school work with the kids, church, sport practices, and house cleaning of course (can't forget that one).
I usually eat my lunch around 2-3pm so I'm not hungry in the evenings, but I just wanted to see what other people think. My lunches are extremely healthy, generally a salad without dressing, solid protein, or other raw fruits and veggies.

Breakfast is usually an egg & cheese sandwich, sometimes egg white only depending on how much time I have in the mornings.

I certainly make dinner for my kids and sit with them while they eat, that's important stuff to me, but I'm rarely hungry in the evenings nor do I feel like wanting to eat at all.

    I'm not super sure I am, but I think so. I honestly have a really hard time keeping track of everything. I'll do it for a couple days, but like I said in the above post I'm sooo super busy trying to keep up with everything else I usually don't have time to several days in a row. Generally when I feel like I'm having diet problems then I start logging again to put it back on the forefront of my brain.
