Make ahead lunches

looking for ideas for lunches that can be made ahead for the week and stored in the fridge so we can just grab them and head out... Made mason jar salads which work really great as well as a quinoa and black bean salad that was really good... Other thoughts or ideas?

    Pinterest is a great place to get ideas. Really anything that you normally cook, just make more and portion some out for lunches. You can also freeze some in portion size containers for longer lasting "grab & go" meals.

    This week I've had a 4 oz hamburger, 100 g of broccoli, 1/2 cup of black beans, and 100 g of blackberries. I usually keep the standard 4-6 oz of lean meat, at least 100 g of vegetable, 1 serving of carbs (sweet potato, brown rice, etc.), and 100 g of fruit.

    If you don't mind your eggs cold you could make a frittata (pumpkin and goat cheese/artichoke and cherry tomatoes/ham and cheese/smoked salmon and chives - whatever you fancy!) and portion it out with some salad :)
