So, I'm trying to come up with an omelette that's under 300-350 calories. (Please don't say "why 300-350 calories?" I have my reasons, but I don't want to argue!)

At the moment, I have:
Two large eggs - 187 calories
1/8 cup shredded cheese - 43
1/2 cup mushrooms - 10 calories

For a total of 240 calories.

What else can I add to make it flavorful/filling for 60-110 more calories? No dessert/fruit stuff, please!

Add some egg whites, or cottage cheese.

A slice of bacon is around 40 calories so a couple of slices would do the trick.

Yeah, I'd add an egg. Not a lot of calorie punch but because I like to mess with recipes, I'd also add some onion.

I've been replacing shredded cheese with cream cheese. Amazeballs.

Nothing in the pan to grease? Or are you using the 5ish calorie spray stuff?

I'd put a cup of sauted veggies as a mix of onions, zuchinis, tomatoes and pepper... would be really tasty if u cut them in small pieces :)

Cooking it in olive or coconut oil will help.

Some meat (Bacon, sausage, ham, carnitas - definitely some kinda pork anyway), and Bell pepper and green onion, top with sliced tomatoes
