I used to take a frozen chicken breast, put it in a small casserole dish and cover it with store-bought bottled marinade. Then, I'd stick it in the fridge until the next evening and it would be thawed, at which time I'd put it straight into the oven and bake until it's done. I don't want to use store-bought marinades anymore because they're full of bad stuff. Any suggestions for easy, inexpensive marinades for one chicken breast that would basically do the same thing?

    you could use a dry rub instead of liquid, or add lemon juice with some balsamic vinegar or rice wine vinegar and some olive oil.

    I just throw my chicken in a dish or even a ziploc bag, squeeze lime juice all over it, cut up onions and garlic on top with some black pepper and put it in the fridge.
