Overcooking causes dryness so try lessening your cooking time (be sure that it gets to the appropriate internal temperature using a thermometer).
For flavor and moisture make a pan sauce. After the chicken is done, let it rest with a piece of foil over it. Reduce the heat of the pan to low and add some wine, stock or both. Use a spatula and scrape all the bits off of the bottom of the pan for flavor while you stir the stock.
Add an acid, such as lemon juice, lime juice, or vinegar. Add herbs, fresh or dried, to taste. I like to add chopped up dried fruit like figs or apricots to my pan sauce.
Finally, for some extra richness, turn off the heat and swirl in a little pat of butter. Serve over your chicken. Yum!0 -
Go down the spice aisle at the grocery store and pick any number of marinades that look good to you. I prefer using vinegar in place of oil, or at least keeping the oil to a minimum. This will help keep them moist. Get a meat thermometer for under $10 and pull the chicken off the heat at 165.
There are also millions of slow cooker chicken recipes on the web to try. You can still overcook chicken this way, but it's a lot more difficult to.0 -
Recipe:
3 chicken breasts
1 bag frozen or fresh green beans
3 medium sized red potatoes
1 packet Italian dressing mix
1/2 stick of butter, diced
Place green beans, potatoes, and chicken side by side in a single layer. Sprinkle the Italian dressing mix over it, then the diced butter. Cook at 350° for 1 hour.0 -
Soak the breast in salted water (brine) for thirty minutes before cooking it.
The salt will help the meat hold onto its moisture.0 -
I marinate it overnight with Italian dressing then bake at 450 for 15-20min. Ahhhhhmazing. If you wanna get crazy, cut it into nuggets, coat with bread crumbs, and serve it with ranch dressing.0
