Hey guys!
I'm new to the whole eating healthy deal and just got a crock pot for christmas! I was wondering if anyone had some good recipes they'd be willing to share?

Hi Haley! I love using my crockpot! Google is my go too to find new ideas, but one of my favorite healthy recipes for my crock pot (super $$ friendly also) is Chicken Tortilla soup.
I have a family of 5, so my recipe is enough for dinner and leftovers, but it freezes really well too, so if you need a smaller batch, just freeze some or adjust to fit your needs.
Chicken Tortilla Soup
2-3 fresh or frozen chicken breasts ( or one shredded rotisserie chicken)
1 box (or 2 cans) Chicken broth
2 cans diced tomato's
1 can black beans, drained and rinsed
1 c. salsa
1-2 tbs. Cumin (if you love it, use 2, if not use 1)
Cook on low for 6-8 hours, shred chicken breast's if used whole ones and add back to soup. You can add these toppers when you serve it if you choose, crushed tortilla chips, sour cream or plain greek yogurt, shredded cheese, cilantro. But they add additional calories. :-) I hope you enjoy!0 -

I did "chicken pot pie soup" tonight. Low calories and it was very filling
I just cooked for my husband and I and had leftovers I used:
2 large chicken breast (defrosted)
1 can of cream of chicken soup
1/4 cup of milk
1/4 cup water
Splash of chicken stock/broth
2 small potatoes chopped in small pieces
And 1 bag of frozen mixed veggies(corn, greenbeans, carrots.etc.)
Salt and pepper to taste
((P.s If you want to thicken the soup add some flour ..about a tbs. at a time along with a splash a milk for your desired consistency..for runny soup add more broth))
Set on low for 8hours0 -
