butternut squash risotto. mmmmmmm

today I am making a delish risotto and using pureed butternut squash instead of butter and cheese to achieve the creaminess. cant wait!!!

    oo no! i make this risotto all the time
    Pumpkin works really well too!!! SO SO SOOOOOO creamy

    im a big cheese lover and find that this throws me off my diet... what I use to replace it is peanut sauce (lots of flavour, not as much fat) or lower fat / full flavour cheeses such as feta- you can use less and get enough taste :)

    as for recipe this is probably the closest to what I make (half the cheese, and you can avoid the white wine but i do find it makes a huge difference in the taste):
