    Cauliflower has carbs though.....

    1) it's not rice. Rice is rice. Cauliflower is still cauliflower regardless of how it's prepared.
    2) it's not carb free. Cauliflower has carbs.

    A head of cauliflower has 29g of carbs.
    Half a cup of rice (cooked) has 22g of carbs.

    Worth it because cauliflower tastes so much better than rice. :smile:

    It's a good alternative, I've tried this and yeah of course it's not 'technically' rice, but it's nice way to get some extra vegetables on your plate. And you'd never manage a whole head of cauliflower blitzed up!

    Hubby is visiting his out-of-town relatives this weekend. I am staying home to medicate and old cat and wallow in a head of cauliflower, the which he dislikes. I'm thinking roasted & mashed, soup, as a host for cheddar ... yummy!
