Homemade dressing question

i like using homemade dressings because I can make enough for 3 days. What is a better low fat ratio of oil to vinegar? Please share your recipes. Thank you

    Here are some recipes for you.

    Creamy Italian
    3/4 cup mayonnaise
    1 tablespoon red wine vinegar
    1 tablespoon lemon juice
    1 tablespoon vegetable oil
    1 tablespoon water
    1 teaspoon Worcestershire sauce
    1/2 teaspoon dried oregano
    1 teaspoon white sugar
    1 clove garlic, chopped

    1. In a small bowl, whisk together the mayonnaise, vinegar, lemon juice, oil, water, Worcestershire sauce, oregano, sugar and garlic until evenly combined.
    2. Chill before serving.

    Thousand Island

    ½ C Mayonnaise
    2 Tbsp. Ketchup
    1 Tbsp. White Vinegar
    2 Tsp. Sugar
    2 Tsp. Sweet Pickle Relish
    1 Tsp. White Onion, Finely Minced
    ⅛ Tsp. Salt
    1 Dash Black Pepper

    Combine all ingredients in a small bowl and stir well.
    Cover and refrigerate for several hours, stirring occasionally so the sugar dissolves and flavor blends.

    Ranch Dressing Mix

    5 Tablespoons dried minced onions
    7 teaspoon parsley flakes
    4 teaspoon salt
    1 teaspoon garlic powder
    Mix together and store in an air tight container.

    For dressing: Mix 2 Tablespoons dry mix with 1 cup mayonnaise (I use Hain Safflower mayo) and 1 cup buttermilk or sour cream. (I use buttermilk.)

    For dip: Mix 2 Tablespoons dry mix with 2 cups sour cream or kreme fresh.
    Mix up a few hours before serving, so the flavors all blend nicely.

    I have seen a lot of TV chefs say a dressing should be 3 part oil and 1 part vinegar. To cut back on the oil. I found sweet vinegar like red balsamic or white balsamic you can use equal parts. But tart vinegar like white vinegar or red wine vinegar are better 2 parts oil and 1 part vinegar. Rice vinegar and apple cider vinegar are somewhere in between I usually go by taste. Honestly sometimes I will use balsamic and rice vinegars just by themselves.

    I second the balsamic vinegar by itself, it's the way I do it and it tastes just fine.

    Look on eating well's website. Search for vinaigrettes. They have awesome recipes.. You can also use the import recipe to keep them. They import great.

    You guys are all so inspiring! I like lime juice in my dressings. This recipe is 1/2 oil, 1/2 lime juice.
