Eating Healthier, Need Help?

Hi!
So here's the thing, I have been trying to eat healthier for over a week now with exercise. My problem is eating healthy. I am really not a fan of veggies and it seems like those are the main thing you need to intake for healthier eating, but maybe that is what it just seems like, I don't know. But what I need help with is eating healthier, or meals that have like hidden veggies where you don't really taste them but they are still there, if that makes sense. Or do I HAVE to eat vegetables? Could I get away with just eating fruit? Any other healthy eating tips/recipes for beginners would be really helpful! Thanks in advanced.

    Check into Jessica Seinfeld's cook books. She has a couple that are all about ways to hide
    veggies in food. Mostly cook, puree and freeze in small containers and add one or two to stews, soups, sauces etc. Her focus is on getting veggies into her kids. Sorry I don't remember what the books are called. I'm sure google does :)

    Certain vegetables can work if you put it in a pie, like spinach and kale. There are enough flavors from other ingredients like cheese and eggs that hide much of the taste of the vegetable.

    I'm not a huge fan of veggies either, but roasting them is super easy and makes them delicious! Maybe look into that.

    No don't fall into the myth that veggies are the only healthy way to go. Whole Wheat Bread w the Germ, Sweet Potatoes, White Rice are healthy carbs, protein: tuna, chicken, eggs are healthy & delicious, fat: peanut butter, butter, nuts & almonds are all healthy foods

    It depends on your definition of healthy. If by healthy you mean a diet that will allow you to lose weight of body fat, then veggies aren't the most important thing, although they do help with bulking up your meals without eating too many calories. If however by healthy you mean a well balanced, rounded out diet, then I'd say eat your veggies, as they contain a lot of fiber and vitamins.

    Easy ways to 'hide' veggies:
    • Very finely chop (I use my food processor) mushrooms, onion and bell pepper and mix them in with meatloaf
    • Use finely diced carrot, onion, bell pepper and zucchini in your bolognese
    • If you're making potato mash, add some mashed cauliflower or root vegetable

    Are there really no veggies that you like? If you do like fruit, you may enjoy sweeter veg like pumpkin, sweetcorn, (honey) roasted carrots, beetroot and red cabbage stewed with apple.

    For example you can add pureed zucchini and carrots to spaghetti sauce or chili.
    Or summer squash added to mac n cheese.
    If you don't like to cook, try buying a dehydrator for your vegetables to make vegetable and fruit chips.

    Why do you want to eat healthier? To achieve exactly what? Or to get rid of what?
  • I don't really need to get rid of anything, I kind of just want to tone and maybe gain some muscle.
  • I want to eat healthier because I am tired of eating fast food all the time if I am being honest hahaha.

    Yeah, it's pretty hard to have a healthy diet without vegetables. You can puree them into sauces, soups, gravies, etc. If you like mashed potatoes, try mashing other white vegetables like turnips, parsnips, rutabaga, or cauliflower in with the potatoes.

    Try different methods of cooking. Roasting or grilling vegetables makes them more palatable for many people. Make them into fries. Mix finely shredded vegetables into burgers or meatballs.
