vegetarian meals!!!

Does anyone have any good vegetarian meals. I am not very creative and was wondering if anyone had any tips. i have been a vegetarian for a year and have basically been eating little vegetarian meals from a package so if anyone has any tips on good meals I would love them. <3

    I was in the same boat and am always on the look out for cholesterol-free foods (which are generally vegetarian)-- I've finally put all of my recipes in one place and started blogging them :)

    if you like tofu- drain extra firm tofu and then freeze it. take the frozen block and put it in a frying pan on low heat. with a fork start scraping the tofu every few minutes so that it crumbles (almost like chopped meat). once the tofu is crumbled up, add your favorite sauce or gravy and serve it over anything you wish. for example, i put it on top of spaghetti (vegetables are a great alternative to spaghetti or you can use shirataki noodles).

    lightlife and veggie patch make great products that you can find near the produce. I like taking the fake meatballs and cutting them up in my salad.

    eggwhite omelettes are great cause you can throw in whatever you like.
    banana and peanut butter sandwiches are yummy.
    high iron cereal and greek yogurt are tasty quick meals as well.

    Hey! I've been vegetarian for about 12 years and I am finally attempting the transition to veganism. I have found the best places to find new, creative vegetarian recipes are to search for ethic food. Start with googling easy things like "vegetarian Mexican recipes" (i.e. bean burritos) and "vegetarian italian recipes" (you might want to add the word "easy" in there too). I've been having a hard time finding vegan pasta though...so Italian might be trickier. Stir-fries are always easy too - you don't even need a recipe - just cut up a bunch of veggies (peppers, onions, asparagus, whatever sounds good) and add a low-sodium sauce - add it on top of brown rice or throw it in a whole wheat tortilla! Lastly, I've been on an Indian food kick lately - cauliflower & garbanzo beans - all spicy - yum!! It's important to try new things, eat lots of veggies, whole grains and beans!

    I've been having a hard time losing weight after my second baby though. I'm thinking it's my activity level because, as you can see, I think I eat pretty healthy. Good luck :heart:

    What kind of meals did you like when you ate meat? I am not vegetarian but don't eat meat/fish very often so most of my meals are vegetarian. I make old favorites but sub in other forms of protein where meat would go- ie, if I make a stir-fry, I use tofu or quorn instead of chicken. If I make tomato sauce for pasta, I'll add kidney beans or chickpeas. For sandwiches, I love hummus, veggie burgers, tofu salad (make the same way as egg salad- just use raw tofu, mash with a little mayo and season- needs more flavor so can add salsa or something...), goats cheese. Ditto salads- throw in some beans or chickpeas, some hummus or salsa, hard boiled eggs, chopped bean burgers, some crumbled feta cheese.

    I also love things like filled pasta- spinach and ricotta tortellini is great to have on hand. Just add some tomato sauce and bulk it out with extra vegetables.

    I recently bought "Appetite For Reduction" ( http://www.amazon.co.uk/Appetite-Reduction-Filling-Low-Fat-Recipes/dp/1600940498 ) which has some great recipes that aren't complicated and all are under 400 cals. Lots of ideas too for salads, sandwiches, etc.

    I tend to hit the bookstores...hit the front "cheap" cookbooks they're trying to get rid of for $5.00. There's always a ton of vegetarian books and I do most of my cooking out of those.
