Haha. Math. Who needs it on a website that counts for you?

Chop and steam your favorite veggies (the best are broccoli, celery, carrots, asparagus, brussel sprouts, and spinach) which should take 2-5 minutes depending on how much you make. Season with garlic pepper, oregano, rosemary, thyme, and/or basil. You can save the leftover water and drink it for a vitamin-filled "snack".

Boil or bake artichokes and serve with hummus.

In recipes that call for rice, you can substitute finely chopped cauliflower.

Also look up salad ideas. There are too many to list.

I put veggies in EVERYTHING. I always have snap frozen veggies in the freezer and I try to always keep baby spinach in the freezer cos it can be welted and put in ANYTHING. I'll put onion, peas, corn, grated carrot, baby spinach, zucchini, mushrooms and anything else I feel like in omelets. If I'm cooking up something like a lite honey mustard chicken I'll ALWAYS add carrots, peas, broccoli, cauliflower etc.

If you're feeling super naughty just baking veggies with low fat cheese is really yummy, too!

My favourite of ALL TIME is okonomiyaki though. VEGETABLE PANCAKES! You only need a little bit of flour, egg and skim milk for it to set into a pancake. Check out some recipes online :)

Soups, casseroles, curries. You can put literally any amount of any kind of veg into all of these. They are also very easy to make, one pot dishes. I do them all the time. You can add a carb or enjoy how ridiculously low carb, low fat, low calorie they are (sometimes 100 calories per bowl for soup, rising to maybe 200 for curry or casserole).

I add veggies to stir frys, wraps, omlets, salads. For dinner I try to have two servings of veggies or a veggie and a fruit. Snack on carrots, bell peppers, celery, and sugar snap peas with hummus or Laughing Cow. Apples and bananas pair well with a Tbs. of peanut butter.

My absolute favorite way to have veggies is ROASTED! Asparagus, broccoli, mushrooms, onions, squash, carrots...almost anything and any combination. Just drizzle with some olive oil, add a little salt and pepper, toss to coat and throw them in the oven on a cookie sheet at around 425 degrees until done. LOVE!
