I'm wondering if I should add my exercise? It just gives me more calories to eat? I workout almost daily but don't want to see the number and eat more!?!?!

MFP is set up with fairly low calorie daily targets as it expects you to log exercise then eat at least some of those calories back. Some people eat back around half their exercise calories as the calorie estimates for exercise on MFP can be quite high.

I write my exercise down and log it in after logging in all my food for the day. That way I know how many "real" calories I have left without having to keep subtracting what was added for exercise.

Yes, that the way MFP is meant to work. Otherwise you're creating a larger deficit than intended and may not be properly fueling your body. Your body need fuel to support your daily workouts.

Why would you not want to eat as much as possible?

Please remember that you are already set at a deficit. I would eat back at least some of the calories, maybe just leave a cushion for any errors. I personally eat back my calories and it does work and I basically lose what MFP predicts.

It depends on the activity setting. If you choose sedentary, then log any extra activity beyond a sedentary lifestyle. If you choose Lightly Active, or Active, then it's a different kettle of fish. Also many people choose to eat back only a portion of their exercise calories (I eat half). It's a trial and error process, so I recommend starting with adding all exercise, eating back half and adjusting the process from there. The aim is to find the system where you lose weight at the rate you have set on MFP - then follow that until it stops working, and adjust as necessary.

Ofc you should log your exercise so its a complete record. Its up to you what % of those calories you eat back. As already mentioned you need to know the burn you log is as accurate as possible. If in doubt be conservative or just eat a % back, say 50. In addition to the estimates from MFP tending to be inflated, people often overestimate their own effort.
Some machines are more accurate than others.
