Vegetarian sweet and sour meatballs. Every meat eater I've made this for has loved it.

Last night I made a slow cooker veggie chili for 153 calories per fl. cup. It made exactly 9 cups.
540 ml can of chickpeas (rinsed)
540 ml can of kidney beans (rinsed)
796 ml can of stewed, diced tomatoes (and they have several flavours, I think mine might have just been the garlic ones) with the juice.
1 cup of low sodium veggie broth
1 cup salsa
284 ml can of sliced mushrooms (next time I'll put in two! - Drained).
3 tbsp. of chili powder
about 1/2 tsp of garlic powder
150 g of cut frozen green beans
150 g chopped baby carrots.
Just dumped and stirred it all in the slow cooker, set to low (good for 6 - 8 hours but since there's no meat, I assume it would be fine for longer) and voila! It was quite nice! And so easy to customize for your preferences!0 -

This is my very favorite vegetarian recipe, you can use lowfat or nonfat mayo, or veganaise, whatever you want. It's SO delicious!

I also like the Forks Over Knives (plant-based wholefoods) cookbook. The Thai vegetable soup (subbing in broccoli and bamboo shoots) is AMAZING served with quinoa or rice.
