On the go job has me feeling defeated

Hi everyone. So to understand this post, I need to tell you a bit about my job. I'm an Environmental Consultant who frequently responds to hazardous materials spills. These calls come in any time day or night and I need to be ready to leave at a moment's notice. Sometimes the calls happen a couple times a day and sometimes that don't happen for weeks and I can be on site for days at a time. Pre-planning meals to bring along is not an option. These spills can take me anywhere in the tri-state area and often to remote areas.
I decided to get healthy and lose weight at the beginning of the year and my husband and I have been doing great staying on track and exercising. My issue is that with going on these spills, the only option for food is eating out or gas station snacks. I've been trying to make the healthiest choices possible, but when I weighed myself this morning, I felt utterly defeated. I haven't lost near enough weight as I feel I should have for working so hard. I've been under my calorie goals almost every day and responding to these spills usually involves physical labor so I'm at least getting some exercise there. But with such little progress it just makes me want to throw in the towel.

Put together a bag of ready-to-eat foods, along with a few bottles of water. Breakfast bars don't have to be just for breakfast. Nutrisystem has several foods that can be kept in a cupboard and eaten with little preparation, my wife uses those for lunch at work. If you need flavor in your water consider Crystal Lite Singles, you dump one sleeve of the powder into a 16oz bottle and you have tea, juice, lemonade.
You could also add some proteins like cheese or salami, keep in the fridge in a bag or baggie ready to grab and go.
My job is on the road most days and I too struggle with eating low calorie and healthy. Lately I've been getting a Chipotle Sofritas salad, its about 670 calories but I eat half for lunch and half for dinner.0 -
Eat less processed foods. I know that is challenging at a gas station, but sometimes they have fresh fruit, nuts, etc. Cutting out sugar is another key. It is something that I struggle with every day. Also, is it possible to have a cooler for you ready to pack and go? If you are not flying to your sites, this might be possible. If you keep pre-portioned items of salad, etc in your fridge at home this could be a good option.
