Question about weighing food

I have FINALLY bought myself a food scale. I am not new to logging (been doing it for forever and a day), but have NEVER weighed ANYTHING. My question is do you weigh your meat raw, or cooked? Or if I have a piece of frozen salmon, that I am cooking from the frozen state, do I weigh it while it's still frozen, or weigh it after I've cooked it. Sorry for the silly questions, but I'm excited about trying my scale for the first time tonight!! lol
