I bought a eggplant never had one in my life lol any good recipes? Also I'm new to this eating healthy if anyone has a good healthy recipe too I like everything I just don't know healthy meals I'm also struggling with carbs I'm always over my carb percentage??

Aubergine (the English word for Eggplant) is gorgeous, if prepared correctly. However, it's nasty as hell if you get it wrong, so (if you can) check whether you have a modern European strain, or a tradition one - modern strains are fine to prepare and cook straight up, traditional ones will need slicing, salting and standing before rinsing, to leech the bitterness out before you cook them. If in doubt, salt and stand - it won't hurt a modern aubergine and can rescue a traditional one.
My favourite recipe is Aubergine Degaku - a Japanese dish. If that's a bit out there for you, ratatouille is also yummy, and a great way to get your veg in - chuck some chickpeas in if you need to boost your protein.
Your diary isn't open, so I can't give specific advice on your carb percentages, but the basic thing to do is cut back your portions of refined carbs (white rice, bread, pasta, potatoes), and replace them with protein (meat, fish, tofu, beans), or non-starchy fruit and veg.0 -

I slice off the ends, then peel about half of the skin off in stripes. Then I slice it into disks about 3/4" thick, sprinkle with salt and let it drain in a colander for about an hour.
I love ratatouille and it is very easy to prepare. Eggplant is pretty good sauteed in a little garlic and olive oil too. I like it grilled--I used to marinate it in a dressing with lot of lemon thyme, then grill it and put it on whole grain bread with fresh tomato, basil and provolone. Mmmm. I had forgotten about that--must remember to do it this summer!

I cut mine into 1/2" slices, sprinkle with salt and put in colander for an hour with a heavy plate on top to drain excess juices. Then I dip in egg and bread crumbs and fry up in a little coconut oil. Once they're golden brown I put them in a baking dish and put sauce on them and bake for half an hour or so.0
