Banana and egg pancakes?!

Have any of you tried the banana pancake recipe going around that entails just 2 eggs and a large banana? Some add cinnamon or vanilla extract. Is this edible? lol

    I add oats, Greek yogurt and vanilla to mine. If you don't add the oats it has a crazy egg flavor.

  • It is very edible!! I love this recipe and make it regularly for breakfast, since I'm not a fan of ripe bananas and I always end up at the grocery store when they've got bunches of yellow-bananas. I add a little spice & coconut oil usually. This morning, I mixed in some leftover kale & bean sprout salad. It was delicious and nice waker-upper.
  • I did this and I did add cinnamon and vanilla extract to it it takes just like custard so yummy

    Yeah all I add to mine are cinnamon and vanilla extract and then ill layer them with some chunky peanut butter and oh my goodness it's so delicious...

    This is the recipe that I have tried, and it's DELICIOUS. The pancakes are filling and not too sweet. I don't put syrup on them to keep the calorie count down. Has lots of protein and some fiber.

    Yeah just banana and egg, not that good. More like a crepe to me. But I want to try adding oats

    That doesn't sound so great. Now I have made protein pancakes that are great (egg whites, oatmeal, vanilla extract, baking soda, cottage cheese) and top with cinnamon and any fruit you like (I prefer berries but bananas work well too).

    My daughter tried them (gluten free) & they were just too thin to be a pancake. Next time she added about 1/4 cup of gf flour mix, & I think they were ok.

    I eat these literally most days...1 tbsp of organic brown flour helps, or a pinch of baking soda :) the riper the banana the better the pancake. Add blueberries its nomcity!

    Yup I make them sometimes - they're not bad, IMO. And they definitely do the trick when I'm craving a sweeter breakfast.

    I don't get it, I've tried them 3 times adding vanilla, cinnamon, pumpkin pie spice, other fruit and all I can taste is egg! Ewww it did not even come close to a pancake taste, even swimming in syrup. I just stick to a few "regular" homemade pancakes. Much better!

    Yup, those are good too. I still like the banana ones when I'm looking for a higher protein pancake fix though. Just a personal preference.

    You can also add them to regular pancakes for those who don't like these. I'm.definitely going to try it with the oats this weekend
  • I've tried them and I love them! Really nice with natural yoghurt and some fresh or frozen fruit!! And so much nicer if you add a bit of cinnamon to the mix. I really need to try the peanut butter though

    Try this one egg, half cup canned pumpkin, one scoop vanilla whey, a little cinnamon stevia nutmeg. Mix it up makes about three pancakes. 30 grams protein 230 calories 10 grams carbs.

    I made these this morning. They were pretty unimpressive. Wish I'd just made some regular pancakes. And was not filling.

    They're a good/healthier alternative to pancakes, although if you're expecting them to taste the same you'll probably be disappointed. They're a good snack and taste better with some cinnamon added in. I think I'll try them with the oats and yoghurt next time!

    I tried them. They tasted a little too banana-y for me as a pancake substitute.

    If you go just egg and banana, make sure everything is blended really well and do not try to make pancakes the size of your head. It will not go well.

    Yes, I just tried these in the past few days. Soooo good. I like them even better than regular pancakes! The first time I used 2 eggs, a banana, cinnamon,and vanilla extract....they didn't need any topping.

    The second time I did the same but added a tablespoon of unsweetened cocoa powder to make them chocolaty. I topped those with pureed raspberries. Really good when you are in a chocolately mood.

    I use an oat-banana recipe (no egg) which I love:
    30g flour (any you like), 45g wholewheat oats (I like to have some fiber!), 1 banana and 100ml milk. Blend all together in food processor and cook as normal.

    The one I routinely eat is 1/3 cup ground oats, 2 beaten eggs and one mashed banana. Mix well and cook. They puff up nicely and I eat fruit and redi whip on top.
