Awesome Broccoli/Mozzarella Frittata!
4 eggs
12 egg whites
1 cup mozzarella cheese
1 cup of broccoli crowns blanched, cooled and cut into small pieces
Spray a cast iron skillet with cooking spray and preheat the oven to 425.
If you have a kitchen aid whisk all the eggs until slightly frothy. If not use a wire whisk.
Put the blanched broccoli in the skillet and spreat evenly.
Pour the eggs in and mix in the cheese. I sprinkled a bit of oregano on top but you can use any herb you like or not.
Bake for 30 minutes.
I quatered it for 4 servings for 6.8 ounce servings (approximately), only 220 calories! I put this recipe into the MFP food library so all the other nutritional info is there as well.

I've been doing a keto "lazy spinach frittata" myself. Eggs, butter, cheese (cheddar), frozen spinach...
Although I do mine in the stove because I seem to have lost my cast iron skillet.

How do you lose a cast-iron skillet?
BTW, I threw one 51 feet at the Celtic Games last summer. Impressed my Welsh boyfriend. I get all kinds of respect now.

It's called packing up and leaving a bad situation in a hurry.
I'll gladly write the skillet off to be rid of the rest.
What are the carbs / fat on that bad boy??

Good Luck llmg970! Even if you did it in a full size skillet it is great for leftovers. It would probably last a good 5 days in the fridge.0
