A (maybe not so) Revolutionary Idea!

Hi guys! I work at a job that sometimes requires me to travel and eat out a lot. This can make healthy eating choices difficult sometimes. Especially when you go out to eat and order a meal and get the dreaded "choice of potato" so you're stuck with fries or a baked potato that you will inevitably cover in butter and sour cream. Now, if you're like me and don't like, or can't eat, the side salad, I found an awesome alternative!

Go ahead and get that baked potato! But instead of covering it in butter and sour cream, go get some cottage cheese from the salad bar (or if you're at home, grab the low-fat stuff out of the fridge) and toss that stuff right on there! Your taste buds will thank you. I came across this by chance and decided to give it a go and see what it tasted like. Holy sweet baby Jesus it was awesome! It tasted like I had slathered that potato in melted cheese (the kind that's bad for you but is super yummy anyway). And for those of you that are a little bit grossed out by cottage cheese texture, that baked potato totally covers it up! I sprinkled a little bit of black pepper over it all and BAM! The perfect potato was born. Even my husband approved when I made it at home a few days later!

Now I feel like with all the deliciousness in this little side dish that someone had to have thought of this in the past and maybe I'm just the last to know. If that's the case, sorry for the rambling. But if you haven't tried this yet, do it! Seriously, you can thank me later.

Love, love, love cottage cheese on my potatoes! It's also really good with chili sauce or Mrs. Dash. It's great to know that your getting a great source of protein that also tastes delicious.

I'm still trying to figure out what cheeses and butters are bad for you?

Also, isn't cottage cheese pretty calorie dense? How many calories does using cottage cheese actually save?

I bet mashed potatoes with cottage cheese with some nutritional yeast would be excellent! I like gourmet cottage cheese from Vito Dairy. It has a far better consistency than a lot of other cottage cheeses...it's really dry and very bland so you can add whatever you like to it to make it tasty. Nomnom

I can't remember the last time I had a baked potato. That's because I don't use my oven. I love cottage cheese but seriously can't imagine it on a potato. I have a hard time understand how cottage cheese works with a savory dish.

My mother used to puree cottage cheese and use it for a sour cream substitute. If you didn't see her puree it, you'd never know it was cottage cheese first.

I usually get a baked potato and either a salad or chili when I stop at a Wendy's. I put either half the low-fat ranch salad dressing from the salad on the potato, or a spoon some of the chili on top of it. Very satisfying meal.

I always ask for salsa with my baked potato, its excellent and definitely lower calorie than the traditional toppings. I hate it when the cook puts a ton of butter on things without warning you so I always try to ask them to hold the butter and oils so that I can control what goes on it.

Eh, a couple tablespoons of sour cream is not bad at all. It's only like 60 calories.
