Veggies?

My list of vegetables are limited to corn, lettuce, onion, red & green peppers and mushrooms. Will eat spinach and zucchini if mixed with something. Any food suggestions that include these w/o a carrot or bean?

    How do you feel about broccoli? I'm super picky when it comes to how mine is prepared but found i truly enjoyed lightly sauteed broccoli (in olive or coconut oil) and then sprinkled with red pepper flakes. Pop in a saute pan over medium-high heat, add a lid and then shake back and forth on your burner until crisp-tender.

    Roasted root veggies like sweet potato, beets and even radishes are delicious! They have a sweet taste that masks the vegginess...vegginess is now a word lol what about sugar snap peas, fresh green beans,

    As for the veggies you already like, puree them and add to sauces for pasta or soups or even cookie or cake batter. You can blend a large batch & freeze in smaller servings. I always sneak pureed spinach into marinara.

    I make a meal that is anywhere from 270-400 calories depending on how much of everything I use. Zucchini, yellow squash, onion, garlic, sometimes spinach, mushroom, tomato and anywhere from 3-6 ounces of ground turkey. With chipotle hot sauce. I don't know why, but it is delicious and incredibly and filling. I can eat it about 4-5 nights a week.

    You could use red or green pepper instead of tomato.

    and do try a new veggie every once in a while. raw turnip? cooked squash? how about Kalle or swiss chard-close to spinach but different
