My fiancé is a paramedic and is gone 5 days a week and only has access to a microwave. Looking for quick and easy healthy meals to make in the microwave or without anything.

prep meals for the week and put them in Tupperware containers. Then when he can eat just pop it in the microwave for a minute or two

I pre-portioned noodles and spaghtti sauce and tacos. He really liked the idea but the taste just was gross i guess.

Quaker Oats the quick oatmeal version with flavors actually tastes good and can be microwave with milk or water. For me though fills me up only slightly more than a snack. You can try two at a time

An epicure steamer is great for the microwave. I use mine for steaming veggies, air popped popcorn, I haven't tried it yet but others use it regularly for fish and chicken. I also cook things put them in portioned out containers and freeze them. Then the first day it's frozen if kept in the fridge I find it doesn't thaw until the second day. Might help to keep the food a little longer.

I don't know about anyone else but, I typically stick to foods that only need to be reheated and not prepared. Tacos sounds like it'd get soggy and gross after the microwave. chicken, beef, rice, veggies, oatmeal, eggs, stuff like that. If all else fails tell him to make his own and stop being so picky
  • Keep pre measured nuts on hand for snacks I recommend 1/3 cup once or max twice a day.
Also here is a great snack which happens to be a great salad as well.
First of all buy a vegetable spiralizer (under $20), spiralizer 2 cups of cucumber, cut in half 10 grape tomatoes, 2 thinly sliced red onion strips and mix together. The spiralized cucumber is like eating cold pasta but tastes like cucumber. Drizzle with Blaze balsamic glaze 2 tablespoons or if you want to change it up once in awhile you can put some red wine vinegar and avacado oil or EVOO instead. I highly recommend the glaze though only 40 calories for 2 tablespoons.

This salad is incredible and could possibly become your go to snack for under 70 calories per the serving that I have explained.
