Pepper Crusted Pork Tenderloin

Ingredients
1 pork tenderloin
3 tbsp dijon mustard
1 tbsp low fat buttermilk
2 tsp minced thyme
1-2 tsp pepper
1/4 tsp sea salt
2/3 cup bread crumbs
Preheat the oven to 425
Place the tenderloin in a baking dish or roasting pan. In a small bowl mix the mustard, buttermilk, thyme, pepper, & salt then spread the mixture over the surface of the meat. Then press the bread crumbs onto the meat.
Cover and bake for 15 minutes. Then uncover and bake for another 60 minutes or until the internal temp reaches 160 degrees.
Let stand for 5 minutes before slicing.
One serving = 3oz
