how do you go about putting in foods that do not show up when you search them? Do you just put in the calories but then what about the other stuff? Like fat and such?

When a food comes up as not found MFP will ask you if you wish to create a new entry, press yes and all of the options will come up for your new entry.0

If you are using the text search, try entering only one or two keywords to bring up more search results.
If you still can not find a suitable match, search the Web to see if there is a close match. Then use FOODS > My Foods > Create (Web version) or Create Food (mobile app) to add a food to your My Foods list. Please do not check the option "Yes, let other MyFitnessPal members use this food" unless you have decent macro- and micronutrient information from a reliable source.
As a last resort, use Quick Add Calories to enter only Calories and make a note in the Food Notes section of your Food Diary.0 -
I do not really care too much about the other stuff, sorry to admit. So I just do quick calorie add.0
