Butternut Squash?

In an attempt to get more fruit and vegetables in my diet, i bought a butternut squash today but i've not even had it before... didn't think that one out!! Anyone know any tasty guilt-free recipes for one??

OMG, Turkey, black bean and butternut squash chilli is a major fav for me! It freezes well, and is great for lunches.

Butternut squash soup. Just cook the squash, scoop out and puree, adding chicken broth until you reach your desired consistency. Season with salt, pepper and nutmeg. It's low cal, freezes well and very tasty. You can add milk to make it creamier too.0

I love tossing it (large dice) with a little cinnamon, cumin, paprika and honey and roasting it in the oven. It is also a great addition to turkey and black bean chili or a Moroccan tagine.
I also love butternut squash with goat cheese and spinach, for example in a salad or as a pasta/lasagna dish.0 -

If you're vegetarian, substitute greens (kale, chard or spinach) for the turkey. Delicious.0 -

This is my fav soup. I make it quite thick. It's very filling and definitely comfort food for a winter day. This recipe makes about 4 portions. I usually double or triple the ingredients in a very large pan and divide into portions for the freezer.0 -
I offen just cut into chunks and roast, with seasoning and a little Virgin olive oil. Simple, yet effective0

ooft... that might have to be a valentines dinner ...it wont be so romantic for us later after all those beans though haha... poor men when we're on diets!! Last night he ate a salad and i WAS NOT in the good books

I like mashing it with cinnamon and a little nutmeg, and almond milk. Then I toast some raw pecans to mix in.0

Cut it in half. Scoop out the seeds. Brush it with a little olive oil. Salt and Pepper. Roast it or pop it in the microwave. Delicious.0

Butternut squash chipotle chili- surprisingly easy, one of my all time favorites. You don't need the avocado or tortilla strips, it's delicious all by itself.

I just slice it, remove the peel, boil it until soft then puree it in my blender (with a little water to get it to move) and eat it as a side dish.0

I eat mine cubed and steamed with a grilled chicken breast, with it all slathered in a 1/4 cup of sugar-free maple syrup, chicken included. It sounds nuts, but it is SO good, and remains one of my favorite healthy guilt-free comfort food meals to this day.0

I slice it in half, scoop out seeds, put in a pan filled with just enough chicken broth to cover the bottom. Bake until soft then scoop out tasty inside. Mash with 1 sweet potato and use as a 'covering' for casserole/meat pie instead of pastry. I've found a cottage pie type mixture (with ground turkey) is nice, as well as a pot pie type filling.0

I like butternut fries. cut into fry sized pieces, toss into zip lock bag with a tablespoon of olive oil and garlic powder or salt/pepper. Bake until crispy.

I peel it, scoop out the seeds and cube it. Then I toss it in olive oil and top with a little sea salt and pepper. I roast it until tender than add to salad or just eat as a side.

Unbelievably good.. Made a few substitutions .. Ie. low fat coconut milk... Etc. I'm on my 5th batch since I found the recipe. You can freeze it but it needs to be put back in a blender/bullet for a whip to mix the milk back in.0 -
Don't throw away seeds, they are also edible. I dry roast for 10 minutes or so0

If you like the one you bought, consider buying peeled cubed squash. It is a bother to peel a large squash. Trader joes and Costco have it.0
