Looking for good lentil soup recipe
I love the lentil soup at Carrabba's Italian grill! Found a couple of copycat recipes, but they are not health conscious. Just wondered if anyone out there had a good lentil soup recipe, possibly one for the crockpot would be good! Thanks!

My hubby make a chicken lentil soup that is delicious. He cooks chicken breats and dice them up and then adds the lentils along with a bunch of seasonings and some dices carrots and celery. Not sure of the nutritional info or what spices he uses but its really yummy.0

I know it's not a recipe, but if there's a Trader Joe's near you, they have a canned Vegetable Lentil soup that is heavenly and it's only like 140 calories or something a cup. It's filling and I add it to my lunch to keep me fuller during the afternoon. It's canned, so it's not uber healthy, but it's made from all natural ingredients so it's better for you than Campbell's or other brand name soups.
I love lentils and if someone has a good recipe, I'd also love to hear it.0 -
Ingredients
1 cup dried brown lentils
4 cups vegetable broth
1 (14 1/2 oz.) can diced tomatoes
2 tablespoons olive oil
2 garlic cloves, diced
1 medium onion, diced
2 large carrots, peeled and sliced
2 celery stalks (including leaves,)chopped
1 bay leaf
2 tablespoons balsamic vinegar
salt and pepper to taste
Directions
1. Pour lentils in a bowl, cover with water, and allow to sit overnight.
2. Over medium heat, cook onions in olive oil in a large soup pan. Add garlic and celery. Once celery begins to soften, add carrots, tomatoes, bay leaf and vegetable stock.
3. Pour in drained lentils.
4. Bring to a boil, reduce heat, and allow the soup to simmer for 30 minutes.
5. Remove and discard bay leaf and add vinegar. Season with salt and pepper to taste.
Makes 4 servings.

Crock Pot Lentil and Apricot Soup
1 cup red lentil
1 onion, diced
1 teaspoon oil
1 garlic clove, finely diced
4 1/3 cups water or 4 1/3 cups stock
2 slices fresh ginger, thin
1/2 teaspoon turmeric
1 teaspoon cumin seed, ground
1 teaspoon coriander seed, ground
1 pinch chili powder or 1 pinch chili flakes, to taste
1/4 cup dried apricot
lemon juice or lemon salt, to taste
salt and pepper
chopped cilantro, to taste, for garnish
Directions:
Prep Time: 5 mins
Total Time: 1/2 day
1 Wash and drain lentils.
2 Chop up everything that requires chopping and throw the lot in the crock pot.
3 Cook on the AUTO setting of the crock pot Garnish with cilantro when serving.

Mexican style Lentil Soup.
1 Cup dry lentils...1 clove of garlic....1/2 cup chopped onions...1/2 cup chopped tomatoes 1/2 cup chopped cilantro...1 cube chicken bullion and salt to taste.
Boil lentils and garlic in 3 cups of water when they are almost done (about 10 min) add onions tomatoes and chicken bullion.. let it boil for couple minutes ...taste for salt add as desired...once the onions are clear it is done! turn heat off and just add cilantro at the end and serve.
Enjoy... this is my favorite Soup by the way!
Note... if you want more runny soup then add one more cup of water0
