Requesting "Zoodle" (Zucchini Noodle) recipes.
What I've done traditionally is simply fried up the zucchini noodles with a minced garlic clove and a bit of olive oil and paired it with a sauce. Alfredo was my first which was pretty good.
I made homemade meat sauce (with a recipe I found on allrecipes) and it was outrageous. I've been making it every 4 days (because that's how long the batches keep in the fridge) and eating two 200 cal servings a day.
I still love it, but I don't want to get bored of it. Today I tried making pizza sauce, adding it to the zucchini noodles with some sliced turkey pepperonis and a half serving of shredded mozzarella for pizza bake pasta. It wasn't out of this world like with the meat sauce, but it was pretty good nonetheless. The zucchini just doesn't complement the pizza sauce as well as the meat sauce. I would eat it again though.
What I hope is that someone here has a good tried and true recipe to expand my horizons with this veggie. Please post if you do. Also it would be ideal if it doesn't require a million weird spices and things I don't have.

I made a dish the other night by sauteeing mushrooms, red capsicum, kalamata olives, and salami then tossing my zoodles through it then stirring through a tablespoon of pesto. It was ridiculously delicious! I'm going to try it with prawns instead of salami0

My two favourites are:
garlic prawns (olive oil, garlic, salt, pepper, prawns), and then stir through the zoodles
skinny carbonara (olive oil, garlic, diced chicken, mushrooms, turkey bacon, low-fat cream - just a little bit, seasonings) stir through the zoodles, and top with a bit of parmesan.0 -
When I'm low on time, I make a pesto chicken zoodle dish. Pesto of your choice, cooked chicken, zoodles, chop up a couple roma tomatoes, and serve with some parmesan. Can cook the chicken in garlic, or spruce up the recipe easily by adding other veggies for more texture.0

Look at Skinnytaste.com. She has a few zoodle recipes. I tried her kung pao chicken with zoodles and it was really good!0
