    Roasted chickpeas are really good
You can spice them up any way you want to sweet or savory.
Sunflower seeds and making your own trail mix.
You can eat your veggies with some hummus. There are a bunch of great vegan sites you can check out like chocolatecoveredkatie.com
    Ohsheglows.com and forksoverbeans.
Also try to join the vegan group on here called happy herbivore for some more ideas

Agree with everything you said. And if it's bread carbs you're avoiding fruit is an excellent option. I'm a huge fan of soynuts, they're full of protein and can even make your own from soy beans http://www.food.com/recipe/roasted-soy-nuts-280911. I suggest Pintrest if you haven't already, literally hundreds of ideas.
Also thanks for deciding to help the animals and the planet!
