I'm a new fan of salads - but I'm seriously lacking when it comes to imagination.

My go to salads are;
1. Morrocon veggie koftas with mixed salad leaves, some chopped apple, chopped cucumber and mint sauce.
2. Mixed rocket and baby leaf salad, balsamic vinegar, smoked salmon/maceral, baby plum tomatoes.

I usually have a large salad, with a small side of carbs (cous-cous, cassava crackers, or rice) and on busy days or gym days I take along an extra snack.

Whilst nice, the salads get a bit boring day-in/day-out.
If you have any nice, leafy salad recipes, please share!

    I always have salads a nice one is feta salad with roasted peppers and toasted pine nuts. Goat cheese also works well but need to make sure not too much

    I've been living of a leafy green salad topped with grilled veg (pumpkin, kohlrabi, mushrooms, zucchini, eggplant, red onion) tossed with paprika and French herbs, lentils, goat cheese and a mustard vinegar dressing.

    I've been having a kale and romaine mix with shredded carrots, red onion or shallots, sesame seeds, and peanuts, and dressed with rice wine vinegar and sesame oil. I'll also add whatever cooked or raw veg I have on hand - roasted cubed butternut squash, julienned red peppers, diced avocado. Depending on the day, I'll add some cooked rice noodles or a soft-boiled egg.

    Tuna Salad-Salad 178 calories-no dressing needed

    1 pouch Starkist Tuna Creations-Sweet and spicy flavor- (90cal)
    1 TBSP Hellmans Light Mayonnaise (35cal)
    1 TBSP Jardines Summer Corn Medley (17cal)
    mix together and serve on a large bed of lettuce, customize with whatever veggies desired.
    Romaine lettuce 3 c (24 cal)
    Sweet grape tomatoes 6-8 (12 cal)

    Chicken Salad wrap(or top a salad) 255 calories

    1 La Tortilla Factory Smart & Delicious Tortillas-Whole Wheat Low carb tortilla (80 cal)
    Tyson or Kirkwood(Aldi) frozen grilled chicken strips. 3 oz (100 cal)
    1 tsp red onion, minced (1 cal)
    2 tbsp. chopped celery (1 cal)
    1 tbsp. Hellmans light Mayonnaise (35 cal)
    1 TBSP Jardines Summer Corn Medley (17 cal)
    1 c shredded lettuce (8 cal)
    2-3 slices tomato (13 cal)

    Chicken, Apple and Bleu Salad My version of Chick-fil-A's market salad 264 calories with 3 TBSP zesty cider vinegar dressing(below)

    2 oz Tyson or Kirkwood(Aldi) frozen grilled chicken strips (67 cal)
    1 small Fuji apple (60 cal) quartered, cored and sliced
    3 cups baby spring mix lettuce (24 cal)
    1/8c blue cheese crumbles (50 cal)
    1/2 oz fresh blueberries and sliced fresh strawberries (16 cal)

    Susan's Zesty Cider vinegar Dressing

    2 tsp Dijon mustard
    1 tsp minced shallot
    1/2 c apple cider vinegar
    2 TBSP light agave syrup
    2 tsp lemon juice
    1/8 tsp cayenne pepper powder
    1/2 tsp kosher salt
    1/2 c water
    2 TBSP vegetable/corn/canola oil (olive oil is too strong tasting here)
    Put all into a jar with a tight lid. Shake to combine.
    Makes 1 1/2 cups. Serves 8/3 TBSP each=47 calories

    I think I better get back into roasting veggies...

    Anyone any tips for roasting peppers? I've never been brave enough to try it myself
