I recently bought a Veggetti. It is an inexpensive kitchen gadget that makes long thin strips out of veggies like summer squash and zucchini. I tried it tonight and was pleasantly surprised. It is easy to use and has many uses. My husband and daughter liked it too. The possibilities are endless.

    I just got one too! I haven't used it yet though, did you boil the veggie noodles of use them raw?

    Love mine too, although I bought 1 for $20 at a kitchen place and then weeks later was at the dollar store and the same one was for $3! Ggrrr! Of course for some reason I bought that one too...ha! Love making veggie noodles and cucumber salads. Fun to eat!

    If you put them in a tupperware for a few days with a paper towel they dry out a bit.

    Some people have posted that they eat them raw with sauce over them to eliminate the soggy noodle. I like to boil for 2 min and don't mind the liquid so much.

    I sautéed them in a tsp of olive oil and garlic and a squeeze of fresh lemon juice.

    I prefer my noodles raw, they have more of an al dente texture. Topping with a hot sauce will soften them a bit.

    I haven't used mine yet, but told hubby that after we get rid of the pasta in our pantry, we are switching!

    I have just discovered courgette spaghetti only I haven't got a special thing yet I use a speed peeler and then fry them in a drop of water for a min, I honestly can't belive I haven't made them before

    Do you think steaming the noodles instead of boiling might help with the soggy-ness? I heard about those things a while ago and wouldn't mind giving them a try.

    It doesn't make a difference for me. I patted with paper towels but still had some water left. Not disastrous but I'd prefer non-diluted bolo gneiss sauce.

    What other veggies have people tried? I've only done zucchini so far.

    I tried the zucchini noodles raw last night with a hot homemade sauce over top and they were awesome! I'm not going to boil anymore. Surprisingly delish! And takes care of soggy issue. Oh...but careful! I got my finger too close to the blade and took off half my fingernail - ouch!

    I like throwing zucchini in a pan with a clove or two of garlic over medium heat, then topping with spaghetti or marinara sauce.

    I also tried carrots but that was a disaster, would not recommend except for maybe over a salad raw.

    I love my vegetti, although i often do a week's worth of meal prep at once, and was getting tired of doing 10 or more zucchini at a time... may buy a spiralizer for bulk processing. For now, i grab the vegetti when i'm doing one or two zucchini, or dice em when i'm doing a bunch of prep at once.

    Vegetti is easy to use, easy to clean, and makes great zucchini strands for pasta replacement.

    I typically caramelize onions and tomatoes in oil or bacon grease, and then toss in the zucchini to sear for 3 minutes or so. give it a quick toss, and cook another couple minutes. Then i pour that over quinoa or rice, and add meat and/or beans for protein.

    i have a spiralizer that i love. but not keen on the zoodles unless they're raw. i've also noodled sweet potato, which shocked my husband; he was sure the spiralizer would break if handling the sweet potato raw. he was wrong. :) if you noodle a sweet potato, it then cuts down dramatically on time it takes to bake! yummy sweet potato crisps. :smiley:

    I like to have the zucchini noodles mixed in with one serving of regular pasta. Bulks it up and gives pasta a great flavor.

    The best thing for keeping them from getting soggy is to just let them dry out some before cooking. Leave the cut noodles on a plate, uncovered, and let them get limp and dry to the touch. Usually a few hours where I live (a desert), but some people might need a day or two if there is more humidity, so can put it in the fridge for that.

    This has worked well for me to give them a better texture.

    my sister got me one for xmas and i dig it for making zuke noodles for sure i dont really like using it for any other veggie though
