Lunch Ideas

I am in major need of ideas for lunch!! I do fine in the mornings, and then for dinner as well...but when it comes to lunch I am always at a standstill... anyone have any good recipes they love for lunch? Or even just some Ideas......

    Hi,
    I'm kind of the same way with lunch. I try to mix it up a bit so I don't get bored. Gordon's grilled herb fish is good with some steamed broccoli or tuna with special k herb crackers. Just a couple of ideas. I hope those help.

    Today I had a turkey wrap, with red grapes

    -spinich tortilla
    -sliced turkey
    -spinich
    -sliced tomato
    -tsp of dijon mustard

    Last week I made a salmon salad
    -grill or bake salmon (you could use chicken too)
    -2-3 cups spinich
    -diced carrot
    -cucumber
    -tomato
    -craisins
    -whatever kind of nuts you have on hand
    -your favorite flavor of vinegrette

    I try to mix it up, but here's one you can play with as far as ingredients go (and what you have on hand):

    1/2 cup cooked brown rice or cooked quinoa
    1/2 cup frozen peas
    1/2 cup raw quartered grape or cherry tomatoes
    2 chopped peppadew peppers (I love these like mad, but you can include what you like).
    2 oz diced cooked chicken, pork, lamb, beef or tofu
    1/2 to 1 tbsp aged balsamic vinegar
    your favorite seasoning (like Mrs. Dash or curry) to taste

    Combine in bowl and heat in microwave for about 90 sec to 2 minutes.
    Top with 1/2 oz crumbled goat cheese (my personal favorite!)
    enjoy! :)

    I am a HUGE fan of stir fry's cause the veggie combinations are endless and you can do spicy, savory, or sweet . They are a great way to get more veggies while using up what is in your fridge. I usually have them for dinner. Then what I do is take the left overs for lunch with me but to make it "different" i combined the stir fry veggies with raw veggies and that will be part of my lunch.

    Example:

    Last nigh's dinner Stir Fry:
    brussle sprouts
    bok choy
    sundried tomatoes
    minced garlic
    braggs liquid aminos
    veggie broth

    Today for lunch:
    left over stir fry over raw baby spinch - sprinkled w/ raw sunflower seeds
    thai kitchen rice noodle soup


    Yesterday for lunch I had chickpea mash in lettuce wraps & pineapple till my heart was content

    1 small can chickpeas, rinsed, drained, and mashed with fork
    1 tsp nayonaise
    1.5 tsp bone suckin mustard
    1 large celery stalk, diced
    onion, diced (didnt measure)
    fresh ground pepper, to taste

    A friend of mine just told me about a simple salad that makes a great lunch...I'm Addicted!
    fresh bean sprouts
    cilantro
    a few shrimp
    a few crushed almonds
    a sprinkle of lime juice and low sodium soy sauce

    amazing!!!

    I used the have the same problem with figuring out lunches but then a friend told me about bento boxes and I'm hooked <3 Here's a couple of my favorite sites for ideas.

    Just Bento is awesome for specifically low cal ideas while Lunch in a Box is more along the lines of good ideas for re-making leftovers.

    Mediterranean Lunch Plate

    Hummus
    Sliced cucumbers
    Baby carrots
    Crackers or pita
    Olives (if you eat them...I don't)

    Greek Lentil Salad (from Vegetarian Times)
    1 cup French green lentils, rinsed and drained
    1/4 small onion
    2 bay leaves
    1 large shallot, finely chopped (1/4 cup)
    2 Tbs. lemon juice
    1 small cucumber, diced (1 cup)
    2 medium tomatoes, diced (1 cup)
    1/4 cup chopped fresh mint
    1 Tbs. olive oil
    1/4 cup crumbled feta cheese

    Cook the lentils. Toss with everything up to the olive oil. Split the cheese between 4 portions. I made this recently, and it's delicious!!! I subbed dill for the mint because I couldn't find any and goat cheese for the feta because I like it better.

    Flat-Out Flatbreads Light- they come in spinach, tomato, italian herb and regular. Only 90 calories, high in fiber.
    3 ounces turkey 60 calories
    lettuce, or any type of veggie
    mustard or some sort of low cal spread
    roll and enjoy with an ounce of light Baked Ruffles 70 calories

    I eat this almost every day! Delicious!

    Salad with grilled chicken

    Not the healthiest but depending on time: Lean Cuisines

    Tuna fish sandwhich (watch the mayo!)

    I'm a bit of a "snacker" when it comes to lunch- Today I am having 1/2 cup safeway caramelized hummus with carrots (fantastic combo) and 1/2 cup of costco's 7 grain salad. (total 360 calories)

    Another fantastic combo is sauteed garlic shrimp with low fat cottage cheese- (Sounds crazy, but try it, it is amazing)
