Hey I'm Becca and I started university in September. Am on the hunt for convenient but healthy food that I could make with a kettle/microwave (we don't have an oven !) - anyone have any ideas?

Do you have a slow cooker/crock pot? There is SOOO much you can do with one. Pinterest search "Healthy Slow Cooker Recipes" for more ideas you could ever dream of yourself! Soups, stews, and chili recipes can all be made in a slow cooker (and the obvious choices), but I've made casseroles in them, too (enchilada style, lasagna, etc.). Take one day a week to make a recipe in it for the week, portion into containers, and VOILA! lunches for the week.
Plus, you can "share" the expense of the ingredients and share the meals with roommates/friends. We did this when I lived in the dorms. Several of us made a crock pot meal (6-8 servings worth), and mixed and matched with each other, so we had something different to eat each day. It was fun and interesting to experience different cuisines (international "floor" of the dorms).0
