Healthy rice recipes?

My husband loves rice. I don't really eat it much but he would eat it for every meal if he could. Lately I've been cooking plain white rice, or the boxed yellow rice or spanish rice (and those are extremely high in sodium!). I need ideas for tasty rice, that's also healthy!

    Bird's Eye Steamers brown rice is only 150 calories/cup and only 5mg of sodium!! In the freezer section of grocery stores and cooks in the microwave!

    I love rice like crazy!!! Okay so I love to make rice cooked in broth. My husbands favorite is mushroom rice. I saute diced fresh mushroom in a SMALL amount of butter or spray. Then I add chicken broth and fresh parley and cook my jasmine rice in the broth. I use the same amount of broth as a person would use water. Sometimes I add a touch of milk or cream if I want the rice to seem a little creamy.

    Sometimes when I make a beef roast I take I take some of the water that my roast cooked in as a substitute for the water. You can really add anything to rice.

    You should also google spanish rice. It only has a few simple ingredients like rotel tomatoes, broth, and cumin!

    I have no clue how healthy it is, but i make this rice dish thats bombskies. I cook jasmine rice in my rice cooker. then i boil chicken in spices, but im sure you can cut up grilled chicken breast, then i shred it and add green enchilada sauce over the top of the chicken and put on top of rice. You can add white jack cheese to it if youd like.....simple, easy, and tasty.....not sure how healthy though

    This blog http://www.skinnytaste.com/ has some really great rice recipes. I tried the Chipotle cilantro lime recipe last night with brown rice instead of white rice and it was amazing. I'll bet it's even more amazing with white rice! She also has a scallion rice recipe that reminds me of an onion rice recipe my mom often made when I was growing up. You can also sautee some veggies and then cook the rice in the same pan with the veggies. Rice is a very flexible dish and if your husband is willing to try brown rice, it's a lot healthier and very yummy!
