Looking for more ideals on what to make. I am on a 1200 calorie diet and having a hard time making healthy foods that are also filling. I am far from picky and willing to try anything. Thank you.

Also hungry girl has great recipes
  • Thank you. I am hoping that the meals will also keep my family healthy, though my 15 yr old don't need it lol. Doesn't hurt to feed my family food that will make them feel better and have more energy.

I make an omelet. 1/2 for my lunch and 1/2 my spouse's breakfast. Under 250 cals per serving.
    4 servings of egg whites
    2 cups broccoli
    2 cups spinach
    4 mushrooms
    1/2 bell pepper
    2 celery stalks
pinch of fresh onion, salt and pepper to taste
    1/4 cup cheese

(It's a lot of veggies I know!!! But stick with me :) )

Sautee veggies. Then prepare omelet in a pre-oil sprayed pan. Let the omelet get a film on bottom then add shredded cheese to one side. Add SOME of the veggies to the other side. Fold over when done. Cut down the middle. Serve with the rest of the veggies.

You can change it up with spices, salsas, etc.

It took practice. I can almost get that fold right every time :)

I love veggies! I used to cook at Waffle House so make a pretty good omelette though never did an egg whites one. Thank you. I will have to try
