Italian Cauliflower Casserole

Not really a recipe. Just something I threw together last night as I was cleaning out the Vegetable drawer and leftovers. It tasted great.

Ingredients:

1 medium head of Cauliflower
1 Red Bell Pepper
2 Cups Homemade Spaghetti Sauce with Ground Beef and Italian Sausage
2 Cups Grated Mozarella Cheese
1 Cup Grated Parmesan Cheese
1/2 Cup Italian Bread Crumbs
Basil
Oregano
Red Pepper Flakes

Instructions:

1. Trimmed Cauliflower and Steamed (Whole) in microwave until tender. Allow to cool.
2. Ladeled half the Spaghetti Sauce on a small baking dish.
3. Ladeled half the Mozarella on tiop of that.
4. Sliced Caluiflower about an inch thick and layered on top of that.
5. Ladeled the other half of the Spaghetti Sauce on top of that.
6. Mixed the chopped basil, oregano and red peppers in a bag with the Parmesan Cheese, Bread Crumbs and the rest of the Mozarella. Shook it up and put it on top of the casserole.

Baked at 325 for 45 minutes. It was delicsious. My wife loved it.

    I have made up something similar to this myself. I love it and surprisingly so did my husband. I use a lot less cheese though and gianelli turkey sausage. Sometimes will add mushrooms too. So good!

    Wanted mushrooms too, but this recipe was dictated by what was sitting in the fridge. Going grocery shopping Friday, so tonight and tomorrow night are going to be even more of a challenge of innovation. Going to be an episode of Chopped.
