My name is Cathy and I joined MFP 5 days ago, today my husband Bob joined me on our weight loss journey, for breakfast we made something we call Bean Stacks, very high in fiber, very simple to make and no fancy foods needed. If anyone wants the recipe, let me know. Have a great day.

    Hi, ok you take 1/2 cup of baked or pork & beans, 1oz shredded cheese, 1 slice bacon cut in half so you have 2 and 1 slice of bread, I use sourdough, toast the bread first, then heat up the beans and cook the bacon, when everything is warmed up, now assemble, take the toast and put the 1/2 cup beans on the toast, then the bacon, then top with the cheese. Put that in the oven on 350 and bake until everything is all bubbly and and melted. Pair this with some fruit and you have an amazing healthy meal or snack. This is truly one of our families most loved things to eat. Try it and please let me know what you think. Love Cathy.

    It is and the cal count is 490 with sm orange and coffe with Splenda and coffee mate creamer. Nice to meet you!

    This sounds very yummy. I love beans of all kinds, but never thought to make breakfast with them. Sounds like a hearty breakfast, yet still light on calories. Bonus points to you for including bacon <3! You get a (*)

    Thank you for your kind words, this has been something my husband Bob taught me how to make 36 years ago when we first got married, everytime I tried to make it I would burn the bread lol, but he ate it anyway! What an amazing man.
