    I didn't have a substantial breakfast today which is unusual for me, so I will probably make some yummy fish tacos again. I had those for dinner last night and they packed in a lot of protein.

    Lemon Spinach Spaghetti Squash. I belong to a fruit/vegetable co-op and I build meals around whatever surprises they give me. I'm not that into squash so figuring how to make myself like it is a challenge but creative recipes like this one made me a fan. Next time I get spaghetti squash, I'll make it with Thai peanut sauce. Pinterest recipes make it happen :)

    Homemade chicken tenders simmered in rotel diced tomatoes with green chilis (this if very good, and can be served with cheese on top, but I left cheese off), homemade mashed potatoes, and green beans.

    If anyone wants the recipe for the chicken, let me know and I can post it. It also has onion, garlic and green pepper added to enhance flavor.

    I need to go grocery shopping like yesterday, so it's a hodgepodge: 5 shrimp with cocktail sauce, deli turkey wrapped around a cheese stick and some Fiber Gourmet crackers with a wedge of Laughing Cow. Sad desk lunch is sad.

    1/4 cup hummus, half avocado, Romain lettuce, tomato, tsp red wine vinegar, wrapped in a whole grain tortilla. One of me go toos. Delicious!

    I love it too! Too bad my mouth can't handle the heat... :confused: if I eat it its usually tears and runny nose and 2-3 glasses of milk ect. Haha
