Mahi Mahi in pineapple sweet and sour sauce

I made this for dinner tonight and wanted to share. I am just learning how to cook fish and this was the first time I had ever had Mahi Mahi. Just wanted to share the recipe.

1 single serve Dole pineapple tidbits in juice
1/4 cup of fresh squeezed orange juice
1 tsp lemon juice
1 tsp lime juice
2 tsp light brown sugar
1/4 tsp ground ginger
1 tsp onion powder
1 tsp garlic powder
black pepper to taste
3 tbls of butter (i used the real stuff )

combine in sauce pan and cook over low heat it will thicken

brown the mahi mahi in and iron skillet coated with butter sprinkle with Mrs dash lemon pepper !

plate and top with sauce

calories 89 for 1/3 of the sauce
10 carbs
5 grams fat
86 sodium

    It will be a cold day in you-know-? when I'll be eating dolphin for any reason.

    Actually they are dolphinfish very different from the mammals known as dolphins.

    Even if it was dolphin whats the big deal? Why are dolphins revered and tuna a delicious sandwich filling? It makes me laugh every time I see "dolphin safe tuna." What do the tuna think about that? LOL
