Thai Inspired - Mandarin Orange Peanut Sauce
Healthy and nomilicious.
1 c. Adams - 100% Natural Peanut Butter - Creamy
2 c. Sheltons - All Natural Chicken Broth-Fat Free-Low Sodium
1 Tbsp. Spice World - Minced Garlic
1 Tbsp. Original Sun Brand - Madras Curry Powder
1 tsp. Spices - Chili powder
1 tsp. Spices - Allspice, ground
1/2 tsp. Spices - Mace, ground
Whisk above ingredients in 2 qt pan. over med-high heat.
Add:
1 cup Coriander (cilantro) leaves - Raw (Cilantro, raw, Chinese parsley, raw)
3 cups Dole - Mandarin Oranges In 100% Fruit Juices, drained
Continue to stir occasionally until mixture almost boils. Lower heat and simmer 3-5 min.
Makes 8 perfect 1/2 c. servings or 4 cups.
Per serving:
165 calories
18 gr. carb
8 gr. fat
1 gr. saturated fat
4 gr. protein
1 gr. fiber
234 mg sodium
14 gr. sugar
We had a bed of field greens, layered with strips of bison, sauteed mushrooms & onions, red bell peppers, and bean sprouts. Poured 1/2 c. of the sauce onto the whole thing and NOMMED. It was so yummy.
Tomorrow we'll do a Satay with the extra steak and sauce.
Substitutions with items found local to another area would work just as well.
