Hi. I'm new to the site. I am gluten free (yep, Celiac) and looking for suggestions on healthy food choices. Thanks.

Both of my parents have Celiac and I do not eat gluten because my face swells. I avoid most gluten free snacks I find them high in sugar. I try to eat as natural as possible lots of Protein and Veggies and nuts. I eat some snacky foods like chips but I have little self control so I try not to get into those often. OH and Peanut Butter Love it0

I also have Celiacs. Eating healthier while being gluten free can be challenging. I stick to meats, fruits and vegetables, and nuts. The website Skinnytaste.com has a section on gluten free recipes that I like too. I stay away from pre packaged "gluten free foods" as well.0

Check out Paleo and grain free cookbooks and recipe sites. The recipes will be gluten and casein free by default. The Paleo ones will also be rather nutrient-rich. The more general grain free ones will be more likely to have substitutes for your old favorites, and may or may not be as nutrient dense, but can be useful when you just want something like what you grew up with.

http://www.satisfyingeats.com/recipes/ (while I'm not a huge fan of substitutes, this is a great source for them; as long as you don't expect exactly the same texture you get from wheat flour, these recipes will be awesome)
Also, you can make a lot of recipes gluten free by substituting in a blend of non-gluten flours (the mix that works best depends a lot on the recipe). That's worth looking into if you like experimenting.0 -
Easiest way for me to eat healthy -- buy all the veggies I like, fresh, from the store once a week. Chop/dice them and store them in the fridge once a week. Each meal, pulling 2 cups or more out, sauteed in coconut oil and a little salt (then steamed once slightly browned) and searched with a serving of protein and maybe, if I am actually hungry, a serving of a starchy carb or fruit.
It takes time and planning, but makes the week a lot easier.0 -
I'm a Celiac too. you can quickly gain weight on gf food substitutions. I eat mainly paleo, meals are easier to cook and you don't spend a fortune on gf flours.0

Watch out for other additives in gluten free products (sugars, oils, salt etc), the first step is reading the label and understanding what it says.0
