Stuffed Peppers

Chop & saute an onion & garlic clove. Take lean ground beef or ground turkey, 1lb. Brown & drain. Add 2 cups cooked brown rice, 8oz can tomato sauce, 1/4 cup parmesan cheese.
stuffs 4 medium size peppers, cut in half. I usually pre cook them for 5 minutes in the microwave, stuff them, then bake 20 min @400 after stuffing
exact calories, etc depends on exactly what you put in them, but yhese areverygood.
if you don't want to use tomato sauce and/or parmesan cheese, you can use an egg or eggbeaters & bread crumbs to bind the filling.
using 93/7 turkey, these are about 160 cal per pepper half.0 -

These ones are vegetarian. You could cut down calories with less cheese, or a low-fat feta0 -

I use quinoa or couscous with ground turkey breast, onions, peppers, diced tomatoes (canned with reduced sodium). Depending on my mood dictates if I go for hot and spicy seasoning or just simple garlic, italian seasoning and parmesan.0

I've had success with this recipe before. I added a little extra tomato sauce but otherwise followed the recipe.
