Anyone have any good on the go breakfast ideas? I usually eat my breakfast when I get to work which often is hardboiled egg and fruit.
Any other ideas that include a lean protein? Preferably something that I can prepare ahead of time and just grab and go in the morning.

I scramble eggs with a little bacon, onion, serrano pepper, and cheese, and cook them in a muffin tin (grease the tin, into a preheated oven at 350 for ~25 minutes).
I make english muffins from scratch, but any bread could do. When the eggs are out of the oven and cooled, i put them on bread, then individually wrap them in a paper towel and freeze them.
I always keep one or two thawed out. I microwave it as i get ready each morning, and then have a hot, tasty, healthy sandwich on my drive to work.0 -
My favorite is overnight oats! I prep 1/2 c whole grain oats, 1/2 c liquid eggwhites, cinnamon and a tbsp of peanut butter in a small container the night before.. place it in the fridge.. then the next morning, all I do is heat it up in the microwave for :40, and you've got yourself a filling & delicious breakfast!0
