Blackberry muffins low fat

Ingredients:
-250g wholemeal plain flour
-1 1/2 tsp bicarbonate of soda
-50g caster sugar
-50g light margarine
-100g blackberries (berries of your choice)
-2 medium eggs
-225ml skimmed milk
-juice of half a lemon
Method:
-pre heat oven to 180 degrees Celsius
-sift flour and bicarbonate of soda together in bowl
-rub in margarine until mixture resembles breadcrums
-add the sugar and berries and mix well
-in a seperate bowl/jug wisk eggs milk and lemon juice until well combined.
-make well in the centre of the flour mixture and pour in the milk mixture.
- stir together until well combined.
- Pour mixture equally into 12 muffin cases and bake for 20-25 mins.
These muffins are tasty low in fat and made with wholemeal flour so give a slow release of energy! Great for breakfast or a snack

Nutritional info, bearing in mind the average blueberry muffin you buy from a shop is around 350 kcal or more!0 -
They look wonderful. Do you know if they freeze well? I like having things like this on hand.0

I've never tried freezing them sorry! I don't see why they wouldn't though0
