yummy dinner idea
so i made this dinner last night and even my husband loved it! it was super yummy. like Stuffed Peppers in casserole form, and only roughly 200 calories a serving!
Serves 6
2 bell peppers, chopped
16oz ground turkey, browned & seasoned (i used garlic & pepper to season)
1 cup cooked brown rice
1.5 cups tomato sauce (i used Classico tomato basil)
.5 cup shredded cheese (used a mixture of part skim mozzarella and a little shredded cheddar)
spray a casserole dish with cooking spray, layer peppers on the bottom, then ground turkey, then rice, then tomato sauce, then cheese. bake at 400 until cheese is melted & bubbly. Enjoy!

I didn't time it, i just took it out when it looked done. Maybe 20 minutes or so.

oh - and just you know, the peppers release a lot of water when they cook, so be sure to use a slotted spoon when you are serving to drain it! i also baked the peppers in the oven for a few minutes while i was preparing everything else to soften them up a bit to be sure they cooked enough.0
