Hi Everyone :-)

I came across a really awesome and simple strawberry balsamic dressing recipe and I wanted to share it....

1 cup strawberries, (6 large berries), rinsed and sliced
1 tablespoon balsamic vinegar
3/4 teaspoon freshly ground pepper
1/2 teaspoon sugar
1/4 teaspoon salt
2 tablespoons almond oil or canola oil

26 calories and 2 grams of fat per tablespoon :-)

Put all ingredients in a blender and there you go! I think this would go great on salads or over white meat like chicken or pork...planning on making a chicken salad with it tonight!

It's equally Good without the Salt if you don't want the extra Sodium.

That sounds good. I imagine you can substitute the sugar with Equal or something similar for someone who is diabetic.

sounds delish, I would use either stevia or agave nectar instead of sugar, and nix the salt since balsalmic vinegar is flavorful enough for me. I never thought of blending a bit of fruit in a balsalmic dressing, great idea!

You know I had a Pomegranate Vinaigrette that was to die for when out to eat recently. I may try your recipe and switch out the berries for Pomegranate.

-I agree with the option to sub the white sugar...I think I may use a bit of honey instead. As far as the salt, I think I'll include it to compliment the sweetness--sweet/salty combos are the best!

Sounds good but I think I'll use 1 packet of sweetener and EVOO instead, it's a healthier oil...... right?

Probably only 1/2 tbsp of oil as well and double the balsamic.

    Thanks!

How many tbsp's did yours make?

I put it in to the calculator but with sweetener, 2 tbsp balsamic and only 1/2 tbsp of olive oil and am getting 25 cals for 6 tbsp - just wanted to compare.

    Thanks!

Yum. I make my own balsamic dressing and like to switch it up. Oh and a dab of honey is delicious in it!

I haven't made it yet, those were the calories provided by the nutrition info on www.eatingwell.com, but if you were able to calculate it more precisely then I'll go with that! Thanks for double-checking! Oh, and as far as oil goes, EVOO is the healthiest. I think they just suggested almond or canola for taste.
