Hey there Fitness Pals!

I stumbled upon this food blog and tried the Taco Pasta Salad and the Soba Salad with Feta and Peas. Both of which were DELICIOUS- so yummy in fact the husband enjoyed it! To ensure the contents of these meals were low fat/cal, I went ahead and opted for low/reduced fat/calories, low sodium ingredients such as cheese, beans, etc. So all in all the Pasta Salad was a HUGE hit. I plugged everything into MFP and figured the number of servings sizes, etc. The hubs and I made a meal out of each salad for well under 500/cal/serving.

  • The Taco Pasta Salad if followed by recipe yields quite a bit of food. I was mixing everything into a 6 QT stockpot and it filled it over half way! Needless to say we ate it for lunch and dinner a few times in a row, and I brought some into the office as did the hubs. Happy munching!
