Food intake/diet advise please

I'm trying to gain muscle, not bulk up hulk style but lean and mean.
My typical weekly diet is as follows:
breakfast: Fruit and nut cereal, on slice of crunchy peanut butter toast and a protein shake.
morn snack: Apple, small serving of sweet potato and half a chicken breast.
Lunch: small portion of brown pasta and half serving of fish.
Afternoon snack: Apple and banana .
Dinner: some kind of meat, pasta, rice, veg mix.
My logs always come in under my goals, I will be upping the chicken and fish portions next week.
Any suggestions for a healthier less fat, cheap and easy meal plan??
Bare in mind I'm a 9-5 desk body.
I hit the gym in the AM for either weights, crossfit of Mma style work outs....advice please

Your diet sounds like a lot of carbs. Watch your carbs, protein and fat table and try to shift the balance more towards protein (and fat). This might help you lean up.0
